Layered Crepe Dessert from Taiwan

Ingredients:

Fresh milk

Butter

10 g castor sugar

¼ Salt

2 eggs

Plain flour (50gms)

Tapioca flour (10gms)

100 ml cream

Fruits

Ice cream of your choice

Strawberry/ Caramel/ Chocolate syrup

Procedure:

Prepare crepes: Pour fresh milk, butter in a non-stick saucepan and boil. As soon as the butter melts, turn off heat. Add sugar, salt and stir until sugar dissolves. Leave mixture to cool. Now, heat a non-stick pan, lightly grease pan, and pour a ladle of batter, ladle the crepe batter to cover the whole pan. Cook over low heat, flipping the crepe over once.

Now, whip the cream until the mixture forms soft peaks.

Creating Layers: Lay a piece of crepe, spread some cream over it and place a layer of sliced strawberries, cover them with some cream, top with another piece of crepe, followed by a layer of sliced kiwis, covering with some cream. Lay another layer of crepe, add a layer of peaches with cream and add a final layer of the crepe.

Leave to chill in the refrigerator.

Serving Tips:

Right before serving, slice the filled crepe into pieces of the rectangle shape.

Scoop ice cream over and drizzle some strawberry/chocolate/caramel syrup. Serve immediately.
