SPINACH & GOAT CHEESE RAVIOLI

Mix refined flour and eggs to make a dough. In a separate bowl, make a stuffing out of mixture of spinach (blanched), goat cheese, roasted almonds, cream cheese, salt, pepper. Cut the ravioli sheet in a round shape and stuff it with mixture.
For Binding: Fold in half moon shape with beaten eggs. Then blanch ravioli.
For Sauce: In hot pan, warm olive oil and saute garlic, kalamata olive, caper and blanched tomato. Mix peeled tomato and add basil leaf cooked with seasoning. Garnish with sliced zucchini and caramelised cherry tomatoes
