SPICED PUMPKIN & BACON MUFFINS

Ingredients

Roasted Pumpkin450 gm

Milk½ cup

Eggs2

Bacon (cooked)150 gm

Bread crumbs (fresh)1 cup

Parmesan Cheese80 gm

Refined Flour¼ cup

Ground Nutmeg½ tsp

Ground Cinnamon½ tsp

Ground Ginger½ tsp

Sugar1 tsp

Saltto taste

Butter (softened)2 tsp


Preparation

In a bowl – combine pumpkin, milk and egg with a fork. Combine all the dry ingredients in a separate bowl and mix with wet ingredients. Mix well to combine and spoon the mixture in to greased muffin cups. Sprinkle chopped bacon over muffin and bake at 180°C for 15-20 minutes. Bake again at 400°C for 15 minutes or until it turns golden brown. Serve warm.
