Protein Packed Poha

Ingredients

Poha (beaten rice) 1 ½ cup

Mixed Sprouts (boiled)1 cup

Peanuts½ cup

Mustard Seeds½ tsp

Onions (finely chopped)¾ cup

Green Chilli (chopped)1-2

Turmeric Powder¼ tsp

Lemon Juice3 tsp

Olive Oil1 tbsp

Saltto taste


Preparation

Place the poha on a sieve and wash lightly. Drain and leave aside for 10 minutes. Heat oil in a non-stick pan and add the mustard seeds. When they crackle, add peanuts and fry them for 2 minutes. Add the onion and green chillies and sauté till the onion turns translucent. Add the mixed sprouts, turmeric powder and salt then sauté for 3 to 4 minutes. Add the poha and lemon juice and mix well. Serve hot, garnished with the chopped coriander leaves.
