Coffee & Chocolate Granite


Milk 1 cup

Cream 1 cup

Yolk 1 egg

Egg 1

Sugar 6 tbsp

Dark Chocolate (melted) 50 g

Gelatin Foil 1

Espresso 1 shot

Single Malt Whisky 1/2 tbsp

Orange zest ½ tbsp

Hazelnut Flour 50 g

Cinnamon Dust for topping


For chocolate mousse boil cream and milk together. Add a tablespoon of sugar, an egg yolk, a cup of milk and bring it to boil. Remove it from heat. Add melted dark chocolate, gelatin foil and refrigerate it. Mix espresso, half of the sugar, whiskey and orange zest together. Freeze it. Give it a stir every 20 minutes.

For Hazelnut sponge, mix hazelnut flour, two tablespoons of sugar and an egg. Microwave it for two minutes. Once cooked, bake in an oven till it is crispy and crunchy. Layer it in a glass. Espresso granite at the bottom followed by chunks of crispy hazelnut sponge with chocolate mousse on the top. Top it with whipped cream and cinnamon dust.
