Summer is the time for easy, vibrant and light recipes and what more one could ask for if mango rules the palate. The freshly picked bubbly fruit finds delectable space in raw and ripe variants in Chef Veena’s famous Summer Collection menu of South East Asian delicacies that give patrons a chance to look forward to the swelter season.
The menu featuring Yum Mamuang kung heng-Spicy and shredded raw mango salad with dry shrimps and pawns, Ga Xao Hot Dieu-Stir-fried Chicken with fresh Mangoes and Cashew nuts Vietnamese Style, Chef’s Special Prawns - Wok fried prawns with tamarind sauce topped with shredded raw mango, crispy shallots and palm sugar and Mango Appam amongst others, does justice to whet the appetite of mango lovers at The Spice Route.
In the words of Arora, Chef De Cuisine, ‘Summer Collection menu has been my personal favourite since the time Spice Route opened doors.
Inspired by fashion fraternity and whipped up to dish out something unique for the patrons, the interesting raw and ripe mango based South-East Asian recipes most of them which are my own creations, offer a perfect refuge from the sweltering heat in the ambient hand painted walls of The Spice Route.
While mangoes are not integral to Thai cuisine, the fruit is abundant in the season and the whole menu revolves around it.’
