Odyssey of 'French' flavours

As part of Bastille Day celebration, The Imperial, takes its guests on a gastronomical journey that offers an array of French dishes

Without a doubt you will have an absolute 'French' experience if you visit The Imperial, Delhi in the next four days.

The hotel recently celebrated Bastille Day (July 12), which is a symbol of unity for the French. And to extend this celebration, '1911 Restaurant' and 'Nostalgia at 1911 Brasserie' made sure to give their visitors an exotic French experience by introducing a very intricately designed, and an elaborate and authentic menu by the Chefs of the hotel.

The French meal will take you on an odyssey of 'French' flavours, coupled with the best of wines.

The food festival, which commenced on July 12, will be on till July 21, at 1911 Restaurant for lunch, and at Nostalgia at 1911 Brasserie for dinner.

Highlights of this 10-day-long extravaganza include classic dishes like 'Terrine de Foie de Volaille au Chutney de Mangue', 'Poëlée de St Jacques et Salade de Fenouil aux Agrumes', 'Filet de Doré Jaune', 'Riz Noir et Beurre Citron', 'Île Flottante meringue', and many others – which are made using traditional French culinary practices.

Once you sit at the restaurant, all set to eat the food, the hotel, and its Chefs will make sure that you revel in an array of flavourful appetizers, followed by a line-up of enticing entrée dishes, and delectable hand-crafted desserts, which hold the promise of bringing a joyful closure to your culinary sojourn.

Talking about the inspiration behind this food festival, and curating this large menu, Chef Prem K Pogakula, Executive Chef, The Imperial, says, "I have always felt a link in Indian and French food. Just like we Indians serve a plethora of dishes in one 'thali', the French people also have the tradition of serving a whole '17-course meal', plated in small quantities. But with time, the 17-meal culture lost its essence and has been cut down to a 7-8 course meal. Therefore, here at Imperial, we have tried to bring that culture alive by presenting 16 dishes out of that extensive meal, which also consists of soups."

"Not only serving mannerism, but we also have very closely observed the preparations of traditional French dishes and tried to implement the traditional methods of cooking for this festival," he adds.

Besides the main course dished prepared using special techniques, the menu even consists of very basic elements such as different loaves of bread, cheese, olives, salads, etc.

In the festival, French classic appetizers like 'Terrine de Foie de Volaille au Chutney de Mangue' (a Chicken liver terrine served with mango chutney), 'Poëlée de St Jacques et Salade de Fenouil aux Agrumes' (Pan-fried scallops with fennel and citrus sala), will be served to you. Followed by Entrée dishes including 'Filet de Doré Jaune', 'Riz Noir et Beurre Citron', 'Filet de Loup', 'Ratatouille et Sauce Vierge', and more such exotic beloved French dishes will be served on your platter.

If you have a sweet tooth, you would not want to miss the very special 'Île Flottante meringue', and 'Poire Belle Hélène', which will give a sweet ending to your wholesome French meal.

As the French cuisine is one of the most admired cuisines in the world, with this festival the hotel takes its guests on an authentic gastronomical journey to celebrate an important but not so popular day.
