‘Extreme imagination is the key’

A Tv Channel recently announced the launch of the their season of its highly successful show - Twist of Taste. In its third season, the show will see international chef and restaurateur Vikas Khanna go on a seaside adventure.

After summarising his journey of the Himalays in a book titled, Seven years of my Himalayan Journey the chef is off to the coastal areas now.  ‘I am going to visit coastal areas, meet home cooks, chefs, farmers, fishermen, bakers, take flavours and come back to my kitchen to give those flavours a twist,’ says Kahnna. He will be travelling to Udvada, Ratnagiri, Goa, Mangalore, Udupi, Manipal, Kochi and Pondicherry. Inspired by delicious, timeless food and riveting stories, Khanna will be adding his signature touch to  make dishes like Caramelised Cucumber Cake to Shrimp Poha Biryani to Udupi Sambar Jar Cakes to Tandoori Octopus.

In an event recently held at Shiros, Khanna spread his magic at a live cookout and also launched a special menu. Talking about his personal touch to dishes he says, ‘Extremes of imagination is the key; what new one can bring to the table without forgetting the basics is what makes a dish extraordinary.’

He also spoke about the new book he is planning about spices, titled Bliss of Spices which is to be launched at the Jaipur Lierature festival.  About the show he said, ‘Through the show, I have had a chance to explore India’s vast coastline and experiment with its best curries and dishes. ’
