‘Food with legacy’ at Old Delhi’s Town Hall

The Town Hall building in the Walled City will soon be a venue for ‘food with legacy.’ The North Delhi Corporation, whichnow has the custody of the heritage building that was the headquarter of Municipal Corporation of Delhi, is working on a project to trace the descendants of renowned gharanas who invented these famous foods and allot them stalls in the Town Hall, which is being developed as a tourist site.
‘We are in talks with history departments of Delhi University and Guru Govind Singh Indraprastha University to provide us creditable information about the history of famous foods and help in tracing out the descendants of those chefs who invented the food,’ said Mayank Sharma, Additional Commissioner of North Delhi Municipal Corporation (North DMC). ‘We are also in touch with some independent historians and a panel will soon be formed to make a list of such foods and trace the lineage of their founders,’ added Sharma.
Eminent historians like Narayani Gupta, Sohail Hashmi and former Chief Election Commissioner of India S Y Quarishi are being considered for the panel. He further added that the list would include both vegetarian and non- vegetarian delicacies. ‘There would be a fine dining area on the first floor and a street food area on the ground floor,’ added Sharma. In the first stage, the officers have identified the legacy and lineage of Mughlai Chicken, Kashmere Chicken and Kayastha Chicken. ‘These foods are unique and Mughlai Chicken in the recent most innovation among them,’ added Sharma. The project will cost Rs 50 crore which is being funded by Union Ministry of Tourism and some other government .
