The seasonal and fresh coastal menu features some of the plumpest crustaceans and fish on offer. A brainchild of Chef Veena- Chef De Cuisine at The Spice Route, the menu came into existence more than twenty years back and is her labour of love, straight from the South-East Asian kitchens. Following the spice route of Thailand and Malaysia, it takes one to the regions of Kerala and Srilanka with its curated specials.
Gorge on prawns flavoured with black pepper wrapped in por-pia skin with Por Pia Kung and enjoy the coastal sumptuousness with Fishcake – Fish minced with cooked jasmine rice, egg white and pickled ginger flavoured with Thai fish sauce. This recipe of Fishcake dates back to 37 years when Chef Veena tried making it for the first time after just casually reading about it in a fictional novel and adapted the recipe to her liking.
Yera Sukha– prawns stirred with Kerala spices, flavoured with star anise and stone flowers, make sure you beat the chill with hot and fragrant flavours. Further linger over your love for the crustaceans with fresh turmeric flavours, bird eye chillies, tamarind in Chef's special tiger prawns cooked in sour curry from Southern Thailand, for a satiating meal. Further, in the seafood map, the menu features delish Meen Biryani – Kerala style fish Biryani while melt in the mouth lobsters in oyster sauce, Kung Nang Khee Mao - Wok fried drunkened lobster with Thai ginger finger, fresh green pepper in Thai oyster sauce, promise to stir your senses with bursting flavours. Not to miss, Ca Cang Kho – slices of sole fillet wok fried with cilantro and scallion in black pepper sauce, adds to the hearty experience of winter collection menu.
