I just love treating myself with good food created with my own hands and feed my loved ones too”, says Rajneesh Wakhloo, who works at F&B and has been associated with iconic brands including hotels like The Radisson and Hyatt Regency Delhi and premium food chains like KFC, Mocha, PVR bluO amongst others for almost 17 years.
He advises to eat healthy in the summers and to drink lots of water. He prefers his meal to be not only delectable and easy to make but also healthy.
A salad made with tropical greens and avocado, pineapple and tomatoes with a hint of extra virgin olive oil and Italian herbs is the best way to re- hydrate in this heat, according to the chef. “Frankly, creating innovative recipes with eggs or making continental variations in sandwiches not only go well when you tend to catch up with friends on weekends but can make a great healthy meal too,” explained chef Wakhloo.
Here’s a healthy recipe of avocado dip ‘Guacamole’ which can be a complement to light evening snacks:
Ingredients:
* 2 medium size avocado
* 1 medium onion
* 1 medium tomato
* 1 green chili
* 1 lemon
* 3-4 basil leaves (optional)
* Salt and black pepper to taste
Method:
* Scoop out the avocado pulp and mash it in a bowl
* Finely chop onions, tomato and green chili
* Add to the pulp and mix it well along with basil leaves
* Squeeze lemon juice to it and mix again
* Add salt and pepper to taste
The twist of basil instead of coriander or cilantro give an Italian touch to this Mexican dip. Also we have replaced red chilies which is usually used in Guacamole, with black pepper
