From the fields of Punjab

The golden fields, yummy lassi (yoghurt drink) and butter chicken are among the few things that are associated with Punjab. 

The culinary treasures of the region however, lie in the homes of the people where dishes rich in flavours and textures are made and served. In their attempt to bring the intricacies of home-cooking to the palate of fancy restaurant-goers, Punjab grill has come up with Rangla Punjab festival where they’re serving piping hot delicacies inspired from the fields of Punjab. 

When one enters the venue, one can easily spot the Phulkari dupattas hung on the walls, giving a distinct colour combination to the restaurant. The welcome drink was Kale Gajar di Kanji which raised curiosity among the culinary enthusiasts.

The dark red colour and the tangy taste of the drink prepped us for the dishes that were to be served further. The dishes included Kotkapura Da Atta Chicken, which is made when a whole chicken is stuffed and marinated with spices and then covered wrapped in atta dough and then roasted in a slow-fired tandoor. This unique preparation, which comes from the Kotkapura region of Punjab, was dry but was thoroughly cooked. What controlled the senses while hogging on to the different delicacies was Pind da Saag, which tempted even the non-leaf-eaters in the house to give up their resistance. 

Another finger-licking dish is Kunna meat which consists of meat pressed into service in a kunna (earthen pot) along with mustard oil with onions, chillies, ginger and garlic to make a braised and stewed mutton. This flavourful preparation of lamb meat hails from the village Chiniot in Punjab. The other dishes like Macchi de Pakore (fish fry) and Khoya Paneer tingled the senses in a subtle manner reminding us of the mainstream dishes. 

The course ended with Gur wale chawal and Makahane ki Kheer which sweetly settled the whole arrangement.

Chef Gurpreet who has brought forth this special menu for Punjab Grill said, “Our challenge was to recreate some dishes that goes beyond the conventional dishes that are served across the world. Our intention at Punjab Grill is to bring the enthusiasts closer to the rustic methods of cooking rather than baking.”
